Shish Tawook with Rice and Toum
Juicy skewers of yogurt and garlic marinated chicken breast, charred on a grill and served with bright rice and pungent garlic sauce.
Ingredients
Quantities are for one portion.
- 1lemon, half juiced, half into wedges
- 150 gchicken breast, cubed
- 15 mlolive oil
- 70 gdry white rice
- 1 tspcumin
- 1 tbspyogurt
- 1 tsppaprika
- 2 tbsptoum (garlic sauce)
- 1 tspgrated garlic
Method
- Rinse the white rice and steam it until fluffy.
- In a bowl, mix the yogurt, paprika, cumin, grated garlic, lemon juice, and olive oil to make a marinade.
- Toss the cubed chicken breast in the yogurt marinade to coat evenly.
- Thread the marinated chicken pieces onto wooden or metal skewers.
- Heat a grill or heavy pan over medium-high. Cook the skewers, turning occasionally, until the chicken is charred and cooked through.
- Pile the warm steamed rice on a serving plate.
- Lay the hot chicken skewers across the rice. Serve alongside the thick toum garlic sauce and fresh lemon wedges.
