Quantities are for one portion.
- 1 tspchili flakes
- 150 gchicken breast
- 15 mlolive oil
- salt and pepper to taste
- 10 gfresh cilantro (coriander), chopped
- 200 gpotatoes, cubed
- 2garlic cloves, crushed
- 1lemon wedge
Method
- Preheat the oven. Toss the cubed potatoes with half the olive oil and a pinch of salt. Roast until crispy and golden brown outside and soft inside.
- Season the chicken breast on both sides with salt and pepper.
- Heat the remaining olive oil in a pan or grill pan. Cook the chicken breast until charred and fully cooked through.
- Remove the chicken and let it rest.
- In a clean, wide pan, heat the hot roasted potatoes over medium heat.
- Stir the crushed garlic, chili flakes, and chopped fresh cilantro into the potatoes. Toss briefly until fragrant.
- Serve the fragrant, spicy batata harra alongside the sliced grilled chicken, and squeeze the lemon over the potatoes.
