Ingredients

Quantities are for one portion.

  • 1 tspchili flakes
  • 150 gchicken breast
  • 15 mlolive oil
  • salt and pepper to taste
  • 10 gfresh cilantro (coriander), chopped
  • 200 gpotatoes, cubed
  • 2garlic cloves, crushed
  • 1lemon wedge

Method

  1. Preheat the oven. Toss the cubed potatoes with half the olive oil and a pinch of salt. Roast until crispy and golden brown outside and soft inside.
  2. Season the chicken breast on both sides with salt and pepper.
  3. Heat the remaining olive oil in a pan or grill pan. Cook the chicken breast until charred and fully cooked through.
  4. Remove the chicken and let it rest.
  5. In a clean, wide pan, heat the hot roasted potatoes over medium heat.
  6. Stir the crushed garlic, chili flakes, and chopped fresh cilantro into the potatoes. Toss briefly until fragrant.
  7. Serve the fragrant, spicy batata harra alongside the sliced grilled chicken, and squeeze the lemon over the potatoes.
