Ful Medames with Pita
A warm and hearty dip of slow-simmered fava beans mashed with garlic, lemon, and olive oil, served with fresh pita bread.
Ingredients
Quantities are for one portion.
- 0.5lemon, juiced
- 30 mlolive oil
- 30 gred onion, finely diced
- 1pita bread
- salt to taste
- 1 tspground cumin
- 100 gcanned chickpeas, drained
- 50 gtomato, diced
- 2garlic cloves, minced
- 200 gcanned fava beans (broad beans), drained
- 10 gfresh parsley, chopped
Method
- In a small pot, warm the fava beans and chickpeas with a splash of water over low heat until simmering.
- Transfer the warm beans to a bowl and partially mash them with a fork, leaving some beans whole for texture.
- Stir the minced garlic, ground cumin, and lemon juice into the mashed bean mixture, seasoning generously with salt.
- Spread the warm ful onto a serving plate or shallow bowl and drizzle the olive oil heavily over the surface.
- Garnish the dish with the diced tomato, red onion, and chopped fresh parsley.
- Serve immediately with the warm pita bread for scooping up the hearty dip.
