Lamb Kofta in Tahini with Rice

Ingredients

Quantities are for one portion.

  • 1 tsplebanese seven spice
  • 1lemon, juiced
  • 15 mlolive oil
  • 70 gdry white rice
  • salt and pepper to taste
  • 1onion, grated
  • 150 glamb mince
  • 2 tbsptahini
  • 1garlic clove, crushed
  • 10 gfresh parsley, chopped

Method

  1. Rinse the white rice and steam it until fluffy. Keep warm.
  2. Drain the grated onion of excess water. In a bowl, knead the lamb mince, grated onion, half the parsley, seven spice, salt, and pepper.
  3. Shape the meat into small patties. Heat the olive oil in a pan and brown them quickly on both sides. Transfer to a baking dish.
  4. Preheat the oven. In a bowl, whisk the tahini, crushed garlic, lemon juice, and a splash of warm water until it turns into a pale, smooth cream.
  5. Pour the tahini sauce over the browned kofta in the baking dish.
  6. Bake in the oven until the meat is cooked through and the sauce thickens and bubbles.
  7. Serve the hot kofta covered in tahini sauce next to the rice, garnished with the remaining fresh parsley.
