Mujadara with Yogurt and Salad
A rustic, comforting dish of savory lentils and rice cooked together, topped with crispy caramelized onions.
Ingredients
Quantities are for one portion.
- 70 gdry brown lentils
- 15 mlolive oil
- 50 gdry white rice
- 2onions, thinly sliced
- 1 tspcumin
- 50 gcucumber, diced
- salt to taste
- 1 smalltomato, diced
- 30 gplain yogurt
Method
- Rinse the dry brown lentils and boil in water until just tender but holding their shape.
- Add the rinsed dry white rice, cumin, and salt to the lentils. Add enough boiling water to cover, then simmer until the rice is tender and the liquid is absorbed.
- Heat the olive oil in a pan over medium heat. Add the thinly sliced onions.
- Fry the onions slowly until they are caramelized, dark brown, and crispy.
- In a small bowl, mix the diced cucumber and tomato with a pinch of salt to create a quick salad.
- Transfer the hot lentil and rice mixture onto a plate.
- Top the mujadara generously with the crispy caramelized onions and serve with the salad and plain yogurt on the side.
