Ingredients

Quantities are for one portion.

  • 1 tsplebanese seven spice
  • 10 mlolive oil
  • salt and pepper to taste
  • 1onion, very finely diced
  • 50 gcucumber, diced
  • 1 tsppomegranate molasses
  • 50 gflatbread dough
  • 1 smalltomato, very finely diced
  • 100 gbeef mince
  • 50 gplain yogurt
  • 10 gfresh mint, chopped

Method

  1. Preheat the oven to a very high heat. Ensure a baking stone or tray is hot.
  2. In a bowl, use your hands to mash the beef mince, finely diced tomato, finely diced onion, pomegranate molasses, seven spice, salt, and pepper into a soft paste.
  3. Roll the flatbread dough out very thin.
  4. Spread the meat paste evenly and thinly over the dough right to the edges.
  5. Bake on the hot tray until the edges of the dough are crisp and the meat is cooked through and bubbling.
  6. In a small bowl, mix the plain yogurt, diced cucumber, chopped fresh mint, and olive oil to form a salad.
  7. Serve the hot crispy meat pie immediately with the cool yogurt salad on the side to balance the rich flavors.
