Freekeh with Chicken
Smoky, nutty cracked green wheat cooked in a spiced broth, topped with tender braised chicken and toasted almonds.
Ingredients
Quantities are for one portion.
- 10 galmonds, slivered or halved
- 1 tspcinnamon
- 1 tsplebanese seven spice
- 15 mlolive oil
- 70 gdry cracked freekeh
- 1onion, chopped
- salt to taste
- 15 gbutter
- 150 gchicken thighs, bone-in
Method
- Sear the chicken thigh in the olive oil in a heavy pot until browned. Remove and set aside.
- In the same pot, sauté the chopped onion until soft.
- Rinse the dry cracked freekeh well. Add it to the pot along with the seven spice, cinnamon, and a pinch of salt.
- Toast the freekeh in the spices for a minute.
- Return the chicken thigh to the pot, pushing it down into the grain. Add enough water to cover everything.
- Bring to a boil, then cover and simmer over low heat until the chicken is tender, shedding off the bone, and the freekeh is cooked with a slight chew.
- In a small pan, melt the butter and toast the almonds until golden. Serve the chicken over the freekeh, scattering the hot buttery almonds on top.
