Freekeh with Chicken

Ingredients

Quantities are for one portion.

  • 10 galmonds, slivered or halved
  • 1 tspcinnamon
  • 1 tsplebanese seven spice
  • 15 mlolive oil
  • 70 gdry cracked freekeh
  • 1onion, chopped
  • salt to taste
  • 15 gbutter
  • 150 gchicken thighs, bone-in

Method

  1. Sear the chicken thigh in the olive oil in a heavy pot until browned. Remove and set aside.
  2. In the same pot, sauté the chopped onion until soft.
  3. Rinse the dry cracked freekeh well. Add it to the pot along with the seven spice, cinnamon, and a pinch of salt.
  4. Toast the freekeh in the spices for a minute.
  5. Return the chicken thigh to the pot, pushing it down into the grain. Add enough water to cover everything.
  6. Bring to a boil, then cover and simmer over low heat until the chicken is tender, shedding off the bone, and the freekeh is cooked with a slight chew.
  7. In a small pan, melt the butter and toast the almonds until golden. Serve the chicken over the freekeh, scattering the hot buttery almonds on top.
