Baked Fish with Tahini and Rice

Ingredients

Quantities are for one portion.

  • 10 gpine nuts
  • 150 gwhite fish fillet (cod or similar)
  • 1lemon, juiced
  • 15 mlolive oil
  • 70 gdry white rice
  • salt and pepper to taste
  • 2 tbsptahini
  • 1garlic clove, crushed
  • 10 gfresh parsley, chopped

Method

  1. Preheat the oven. Season the white fish fillet with salt and pepper.
  2. Heat the olive oil in a pan and quickly sear the fish on both sides to give it color, but leave the center raw. Transfer fish to a baking dish.
  3. Rinse the white rice and steam it until fluffy.
  4. In a bowl, whisk the tahini, crushed garlic, lemon juice, salt, and a splash of warm water until it forms a smooth, pourable cream.
  5. Pour the tahini sauce over the seared fish in the baking dish.
  6. Bake in the oven until the fish is cooked through and flakes easily, and the sauce is hot and thickened.
  7. In a dry pan, toast the pine nuts until golden. Serve the hot baked fish covered in its creamy tahini sauce, alongside the rice, garnished with parsley and the pine nuts.
