Ingredients

Quantities are for one portion.

  • 50 ghummus (store-bought)
  • 1 tspchili flakes
  • 15 mlolive oil
  • 10 gfresh coriander, chopped
  • 1pita bread
  • 2falafels (store-bought, 60g total)
  • salt to taste
  • 150 gpotatoes, cubed

Method

  1. Boil the potato cubes in salted water until just tender, then drain completely and let them steam dry for a few minutes.
  2. Heat the olive oil in a frying pan over medium-high heat and fry the potatoes until they are deeply golden and crispy on all sides.
  3. Toss the chili flakes and chopped coriander into the pan with the crispy potatoes, cooking for an additional minute until highly fragrant.
  4. While the potatoes cook, heat the falafels and warm the pita bread according to their packet instructions.
  5. Spread the smooth hummus generously across a serving plate.
  6. Arrange the hot, spicy batata harra and warm falafels over the hummus, serving immediately with the soft pita bread.
