Batata Harra with Falafel and Hummus
Crispy, spicy, garlic-and-coriander coated Lebanese potatoes served alongside warm, hearty falafels, smooth hummus, and a soft pita bread.
Ingredients
Quantities are for one portion.
- 50 ghummus (store-bought)
- 1 tspchili flakes
- 15 mlolive oil
- 10 gfresh coriander, chopped
- 1pita bread
- 2falafels (store-bought, 60g total)
- salt to taste
- 150 gpotatoes, cubed
Method
- Boil the potato cubes in salted water until just tender, then drain completely and let them steam dry for a few minutes.
- Heat the olive oil in a frying pan over medium-high heat and fry the potatoes until they are deeply golden and crispy on all sides.
- Toss the chili flakes and chopped coriander into the pan with the crispy potatoes, cooking for an additional minute until highly fragrant.
- While the potatoes cook, heat the falafels and warm the pita bread according to their packet instructions.
- Spread the smooth hummus generously across a serving plate.
- Arrange the hot, spicy batata harra and warm falafels over the hummus, serving immediately with the soft pita bread.
