Ingredients

Quantities are for one portion.

  • 50 glabneh (store-bought)
  • 50 gblack olives, pitted
  • 10 mlolive oil
  • 0.5cucumber, sliced
  • 15 gza'atar spice blend
  • 100 gtomato, sliced
  • 1flatbread (store-bought, 100g)

Method

  1. Preheat the oven or grill. In a small bowl, mix the olive oil and the za'atar spice blend until a thick, dark paste forms.
  2. Spread the aromatic za'atar paste completely and evenly over the top of the flatbread.
  3. Bake or grill the flatbread for a few minutes until it is perfectly hot, soft, and fragrant.
  4. While the flatbread heats, arrange the sliced cucumber, sliced tomato, and black olives neatly on a serving platter.
  5. Spoon the creamy labneh into a small dipping bowl.
  6. Serve the hot manakish za'atar immediately alongside the cool labneh, fresh vegetables, and salty olives.
