Bibimbap with Beef and Fried Egg

Ingredients

Quantities are for one portion.

  • 70 gdry white rice
  • 150 gminced beef
  • 1 tbspgochujang
  • 1 tbspvegetable oil
  • salt to taste
  • 1egg
  • 1 tbspsesame oil
  • 15 mlsoy sauce
  • 50 gfresh spinach
  • 50 gcarrot, julienned

Method

  1. Steam the white rice until fluffy.
  2. Blanch the spinach in boiling water. Squeeze out excess moisture and toss with half the sesame oil and a pinch of salt.
  3. Heat a tiny bit of vegetable oil in a pan. Sauté the julienned carrots until tender but crisp. Set aside.
  4. In the same pan, fry the minced beef with the soy sauce until browned and cooked through.
  5. Fry the egg in the remaining vegetable oil until the edges are crispy and the yolk is slightly runny.
  6. Place the hot rice in a wide bowl. Arrange the beef, spinach, and carrots in neat sections over the rice.
  7. Place the fried egg in the center and spoon the gochujang beside it. Mix everything together before eating.
