Dakgalbi with Rice
Spicy stir-fried chicken chunks mixed with sweet potato and cabbage in a robust gochujang chili sauce, served with rice.
Ingredients
Quantities are for one portion.
- 50 gwhite cabbage, chopped
- 15 gsugar
- 70 gdry white rice
- 30 ggochujang (Korean chili paste)
- 50 gsweet potato, cubed
- 1 tbspvegetable oil
- 1 tbspsesame oil
- 30 mlsoy sauce
- 150 gchicken thighs, cut into pieces
Method
- Rinse the white rice and steam it until fluffy. Keep warm.
- In a bowl, mix the gochujang, soy sauce, sugar, and sesame oil to form a thick marinade. Toss the chicken pieces in this mixture.
- Heat the vegetable oil in a wide pan over medium heat.
- Add the marinated chicken, chopped cabbage, and cubed sweet potato to the pan.
- Stir-fry constantly to ensure the thick gochujang sauce does not burn to the bottom of the pan.
- Cook until the sweet potato cubes are soft and the chicken is fully cooked through.
- Serve the spicy chicken and vegetables alongside the hot steamed rice.
