Zhajiangmian
A savory Chinese noodle dish featuring thick wheat noodles topped with an intense, dark, fermented sweet bean and minced pork sauce.
Ingredients
Quantities are for one portion.
- 2 tbspsweet bean paste (tianmianjiang)
- 100 gdry noodles
- salt and pepper to taste
- 1cucumber, julienned
- 1 tbspvegetable oil
- 150 gpork mince
- 20 mlsoy sauce
- 2garlic cloves, minced
- 1spring onion, sliced
Method
- Cook the dry noodles in salted boiling water until tender, then drain and set aside.
- Heat the vegetable oil in a pan over medium heat. Add the minced garlic and sliced spring onion, cooking until fragrant.
- Add the pork mince and cook until browned, breaking it up with a spoon.
- Stir in the sweet bean paste and soy sauce. Simmer over low heat until the sauce thickens and glazes the pork.
- Place the cooked noodles in a serving bowl.
- Spoon the rich pork sauce directly over the center of the noodles.
- Top with the julienned cucumber and toss everything together right before eating.
