Ingredients

Quantities are for one portion.

  • 2 tbspsweet bean paste (tianmianjiang)
  • 100 gdry noodles
  • salt and pepper to taste
  • 1cucumber, julienned
  • 1 tbspvegetable oil
  • 150 gpork mince
  • 20 mlsoy sauce
  • 2garlic cloves, minced
  • 1spring onion, sliced

Method

  1. Cook the dry noodles in salted boiling water until tender, then drain and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the minced garlic and sliced spring onion, cooking until fragrant.
  3. Add the pork mince and cook until browned, breaking it up with a spoon.
  4. Stir in the sweet bean paste and soy sauce. Simmer over low heat until the sauce thickens and glazes the pork.
  5. Place the cooked noodles in a serving bowl.
  6. Spoon the rich pork sauce directly over the center of the noodles.
  7. Top with the julienned cucumber and toss everything together right before eating.
