Ingredients

Quantities are for one portion.

  • 50 mlwater
  • 1 tbspsambal oelek (store-bought)
  • 1 tspground coriander
  • 150 gtempeh, sliced
  • 50 gcucumber, sliced
  • 1 tbspvegetable oil
  • 80 gjasmine rice (dry weight)
  • 2garlic cloves, minced
  • 1 tspsalt

Method

  1. Rinse the jasmine rice and cook it according to the package instructions until fluffy.
  2. In a shallow bowl, whisk together the minced garlic, ground coriander, salt, and water to create a marinade.
  3. Add the tempeh slices to the bowl, tossing them in the marinade to coat, and let them sit for a few minutes.
  4. Heat the vegetable oil in a frying pan over medium-high heat and carefully fry the tempeh slices until golden brown and crispy on both sides.
  5. Drain the fried tempeh briefly on a paper towel.
  6. Serve the crispy tempeh alongside the warm jasmine rice, with the cucumber slices and a spoonful of spicy sambal oelek on the side.
