Tempeh Goreng with Rice and Sambal
Golden, crispy fried tempeh marinated in coriander and garlic, served with jasmine rice and spicy Indonesian sambal.
Ingredients
Quantities are for one portion.
- 50 mlwater
- 1 tbspsambal oelek (store-bought)
- 1 tspground coriander
- 150 gtempeh, sliced
- 50 gcucumber, sliced
- 1 tbspvegetable oil
- 80 gjasmine rice (dry weight)
- 2garlic cloves, minced
- 1 tspsalt
Method
- Rinse the jasmine rice and cook it according to the package instructions until fluffy.
- In a shallow bowl, whisk together the minced garlic, ground coriander, salt, and water to create a marinade.
- Add the tempeh slices to the bowl, tossing them in the marinade to coat, and let them sit for a few minutes.
- Heat the vegetable oil in a frying pan over medium-high heat and carefully fry the tempeh slices until golden brown and crispy on both sides.
- Drain the fried tempeh briefly on a paper towel.
- Serve the crispy tempeh alongside the warm jasmine rice, with the cucumber slices and a spoonful of spicy sambal oelek on the side.
