Ingredients

Quantities are for one portion.

  • salt and pepper to taste
  • 1onion, minced
  • 70 gwhite rice
  • 1 tspground coriander
  • 1 tspground turmeric
  • 2 tbspvegetable oil
  • 1 tbspsambal oelek
  • 150 gchicken thighs, bone-in
  • 2garlic cloves, minced

Method

  1. Cook the dry white rice in salted water until fluffy. Set aside.
  2. Mix the minced onion, garlic, ground coriander, turmeric, salt, and pepper into a paste with a splash of water.
  3. Bring the chicken thighs and the spice paste to a boil in a pot of water, then simmer until the chicken is cooked through and flavorful.
  4. Remove the chicken from the spiced broth and drain well.
  5. Heat the vegetable oil in a pan over medium-high heat.
  6. Fry the boiled chicken until the exterior is extremely crisp and golden brown.
  7. Serve the crispy fried chicken hot, alongside the white rice and a spoonful of spicy sambal oelek.
