Ingredients

Quantities are for one portion.

  • salt and pepper to taste
  • 1onion, thinly sliced
  • 70 gwhite rice
  • 1 tbspvegetable oil
  • 5 mlsoy sauce
  • 1tomato, cut into wedges
  • 150 gchicken thighs, bone-in
  • 2garlic cloves, minced
  • 2 tbspsweet soy sauce (kecap manis)

Method

  1. Cook the dry white rice in salted water until soft and fully tender. Keep warm.
  2. Season the chicken thighs with a pinch of salt and pepper.
  3. Heat the vegetable oil in a wide pan and sear the chicken efficiently on both sides until browned.
  4. Toss the sliced onion and minced garlic into the pan alongside the chicken, cooking until they soften.
  5. Pour the sweet soy sauce, regular soy sauce, and a small splash of water into the pan.
  6. Add the tomato wedges. Lower the heat, cover, and gently simmer until the chicken is tender and the sauce reduces to a sticky glaze.
  7. Serve the dark, glossy chicken and thick sauce beside the hot white rice.
