Vegetarian Nasi Goreng with Fried Egg
Classic Indonesian fried rice infused with sweet soy sauce and sambal, loaded with vegetables and topped with a crispy fried egg.
Ingredients
Quantities are for one portion.
- 50 gcucumber, sliced
- 1 tbspvegetable oil
- 1 tbspsambal oelek
- 2eggs
- 100 gjasmine rice (dry weight)
- 15 mlsoy sauce
- 50 gcabbage, shredded
- 2garlic cloves, minced
- 1shallot, finely chopped
- 1 tbspkecap manis (Indonesian sweet soy sauce)
- 50 gcarrot, julienned
Method
- Rinse the jasmine rice, cook it according to package instructions, and spread it on a tray to cool completely (preferably using day-old rice).
- Heat half of the vegetable oil in a wok or large pan over medium-high heat, then fry one of the eggs until crispy with a runny yolk and set aside.
- In the same wok, add the remaining oil, then sauté the garlic and shallot until fragrant.
- Add the shredded cabbage and carrots, tossing quickly until slightly softened.
- Push the vegetables to the side, crack the second egg into the wok, and scramble it before mixing it back into the vegetables.
- Add the cooled rice to the wok along with the kecap manis, soy sauce, and sambal oelek, stirring vigorously until the rice is heated through and evenly colored.
- Serve the fried rice hot, topped with the fried egg and accompanied by cucumber slices.
