Ingredients

  • 50 gcassava flour
  • 15 mlolive oil
  • salt and pepper to taste
  • 1onion, diced
  • 70 gwhite rice
  • 250 gpork ribs
  • 10 gbutter
  • 1egg
  • 2garlic cloves, crushed
  • 1lime

Method

  1. Preheat the oven. Rub the pork ribs with salt, pepper, crushed garlic, lime juice, and olive oil.
  2. Roast the pork ribs until browned on the outside and tender near the bone.
  3. Simmer the dry white rice in salted water until fluffy and cooked through.
  4. Melt the butter in a pan over low heat. Cook the diced onion until translucent.
  5. Scramble the egg in the pan alongside the softened onion.
  6. Add the cassava flour to the pan, turning until golden and crisp, and season with salt.
  7. Serve the ribs alongside the white rice and toasted farofa.
