Pork Ribs with Farofa and Rice
Succulent, slow-roasted pork ribs bursting with rustic charm, accompanied correctly by crisply toasted golden farofa and white rice.
Ingredients
Quantities are for one portion.
- 50 gcassava flour
- 15 mlolive oil
- salt and pepper to taste
- 1onion, diced
- 70 gwhite rice
- 250 gpork ribs
- 10 gbutter
- 1egg
- 2garlic cloves, crushed
- 1lime
Method
- Preheat the oven. Rub the pork ribs with salt, pepper, crushed garlic, lime juice, and olive oil.
- Roast the pork ribs until browned on the outside and tender near the bone.
- Simmer the dry white rice in salted water until fluffy and cooked through.
- Melt the butter in a pan over low heat. Cook the diced onion until translucent.
- Scramble the egg in the pan alongside the softened onion.
- Add the cassava flour to the pan, turning until golden and crisp, and season with salt.
- Serve the ribs alongside the white rice and toasted farofa.
