Vatapá with Rice
A famously complex and luscious paste composed uniquely of bread, peanuts, and intensely flavorful dende oil carrying delicate shrimp.
Ingredients
Quantities are for one portion.
- 1 smallbread roll
- 10 gfresh ginger, grated
- 50 groasted peanuts, crushed firmly
- 15 mlolive oil
- salt and pepper to taste
- 1onion, chopped
- 50 mlcoconut milk
- 70 gwhite rice
- 1 tbspdende oil
- 100 graw shrimp, peeled
Method
- Simmer the dry white rice in salted water over low heat until cooked. Set aside.
- Tear the bread roll into pieces in a bowl and pour over the coconut milk to soak.
- Sauté the chopped onion in the olive oil in a pot with the grated fresh ginger.
- Mix the soaked bread into the pot with the crushed peanuts.
- Add the dende oil to the mixture and stir until creamy.
- Add the raw shrimp to the thick paste, cooking just until they turn pink. Season with salt and pepper.
- Serve the thick vatapá next to the white rice.
