Vatapá with Rice

Ingredients

Quantities are for one portion.

  • 1 smallbread roll
  • 10 gfresh ginger, grated
  • 50 groasted peanuts, crushed firmly
  • 15 mlolive oil
  • salt and pepper to taste
  • 1onion, chopped
  • 50 mlcoconut milk
  • 70 gwhite rice
  • 1 tbspdende oil
  • 100 graw shrimp, peeled

Method

  1. Simmer the dry white rice in salted water over low heat until cooked. Set aside.
  2. Tear the bread roll into pieces in a bowl and pour over the coconut milk to soak.
  3. Sauté the chopped onion in the olive oil in a pot with the grated fresh ginger.
  4. Mix the soaked bread into the pot with the crushed peanuts.
  5. Add the dende oil to the mixture and stir until creamy.
  6. Add the raw shrimp to the thick paste, cooking just until they turn pink. Season with salt and pepper.
  7. Serve the thick vatapá next to the white rice.
