Ingredients

Quantities are for one portion.

  • 200 mlchicken stock
  • 5 mlolive oil
  • 50 ghalloumi or coalho cheese, cubed
  • salt and pepper to taste
  • 1onion, diced
  • 10 gfresh coriander, roughly chopped
  • 70 gwhite rice
  • 100 gcanned black-eyed peas, drained
  • 50 gsmoked sausage (calabresa), sliced
  • 50 gsmoked bacon, diced
  • 2garlic cloves, minced

Method

  1. Crisp the diced bacon and sliced sausage together in a heavy pot over medium heat.
  2. Add the chopped onion and minced garlic into the pot, cooking until soft.
  3. Add the dry white rice to the pot, stirring well to toast slightly.
  4. Stir in the drained black-eyed peas, salt, pepper, and the chicken stock. Wait for the liquid to simmer.
  5. Cover tightly, lower the heat, and cook quietly until the rice is thoroughly tender and dry.
  6. In a separate lightly oiled pan, sear the cubed cheese until beautifully browned on all sides.
  7. Fold the browned cheese and fresh coriander gently through the steaming rice, then serve.
