Baião de Dois
A heavily fragrant mixed rice dish generously stacked with seared sausage, bacon, tender black-eyed peas, and golden cheese.
Ingredients
Quantities are for one portion.
- 200 mlchicken stock
- 5 mlolive oil
- 50 ghalloumi or coalho cheese, cubed
- salt and pepper to taste
- 1onion, diced
- 10 gfresh coriander, roughly chopped
- 70 gwhite rice
- 100 gcanned black-eyed peas, drained
- 50 gsmoked sausage (calabresa), sliced
- 50 gsmoked bacon, diced
- 2garlic cloves, minced
Method
- Crisp the diced bacon and sliced sausage together in a heavy pot over medium heat.
- Add the chopped onion and minced garlic into the pot, cooking until soft.
- Add the dry white rice to the pot, stirring well to toast slightly.
- Stir in the drained black-eyed peas, salt, pepper, and the chicken stock. Wait for the liquid to simmer.
- Cover tightly, lower the heat, and cook quietly until the rice is thoroughly tender and dry.
- In a separate lightly oiled pan, sear the cubed cheese until beautifully browned on all sides.
- Fold the browned cheese and fresh coriander gently through the steaming rice, then serve.
