Arroz Carreteiro
A historically rich cowboy dish where dry-cured beef and heavily spiced rice mingle together as a hearty centerpiece.
Ingredients
Quantities are for one portion.
- 1red bell pepper, finely chopped
- 200 mlbeef stock
- salt and pepper to taste
- 1onion, diced
- 70 gwhite rice
- 50 gsmoked bacon, finely diced
- 2garlic cloves, minced
- 100 gsalt-cured beef (carne seca), desalted and shredded
- 10 gfresh parsley, chopped
Method
- Fry the finely diced bacon in a pot over medium heat until crisp.
- Add the shredded cured beef to the same pot, searing it alongside the bacon.
- Add the chopped onion, bell pepper, and minced garlic to the pot, cooking until softened.
- Add the dry white rice to the mixture, stirring for a minute until well toasted.
- Pour the beef stock over the rice, seasoning with a small pinch of salt and pepper — the cured meats are already salty.
- Cover with a tight lid and lower the heat. Simmer until the rice absorbs all the liquid.
- Fluff with fresh chopped parsley and serve hot.
