Tutu de Feijão with Sausage and Rice
A dense, intensely savory puréed bean dish fortified smoothly with toasted cassava flour and smoky sausage pieces.
Ingredients
Quantities are for one portion.
- 40 gcassava flour
- 15 mlolive oil
- 100 gcanned black beans, fully undrained
- salt and pepper to taste
- 1onion, finely diced
- 70 gwhite rice
- 1egg
- 50 gsmoked sausage (calabresa), sliced
- 50 gsmoked bacon, sliced
- 2garlic cloves, minced
Method
- Cook the dry white rice in salted water until tender and set aside.
- Crisp the sliced bacon and smoked sausage together in a pan. Once browned, remove the meats and leave the rendered fat.
- Soften the diced onion alongside the garlic in that same pan.
- Pour the undrained black beans into the pan and blend or mash them into a thick soup. Return the crisp meats.
- Slowly fold the cassava flour into the beans, stirring constantly to prevent lumps.
- In a small separate pan lightly greased with olive oil, quickly fry the egg sunny-side up.
- Serve the bean purée alongside the rice, topped with the fried egg.
