Mapo Tofu with Steamed Rice
A incendiary, fabulously pungent tofu plate completely loaded confidently with fermented flavored bean paste blanketing minced pork.
Ingredients
Quantities are for one portion.
- 10 gfresh ginger, grated
- 200 gfirm tofu, cubed
- 2 tbspbroad bean paste (doubanjiang)
- 70 gwhite rice
- 1 tbspvegetable oil
- salt to taste
- 1 tbspsesame oil
- 100 gpork mince
- 15 mlsoy sauce
- 2garlic cloves, minced
- 1spring onion, finely chopped
Method
- Cook the dry white rice in salted water until soft.
- Sear the pork mince in the vegetable oil in a heavy pan until crisp.
- Add the minced garlic and grated ginger, frying briefly until fragrant.
- Fold in the thick broad bean paste and soy sauce, building a dark sauce.
- Slide the cubed firm tofu into the bubbling reduced sauce and toss gently.
- Cook briefly until the tofu is warmed through. Drizzle the sesame oil over everything.
- Serve over the steamed white rice, garnished with the chopped spring onion.
