Ingredients

Quantities are for one portion.

  • 10 gfresh ginger, grated
  • 200 gfirm tofu, cubed
  • 2 tbspbroad bean paste (doubanjiang)
  • 70 gwhite rice
  • 1 tbspvegetable oil
  • salt to taste
  • 1 tbspsesame oil
  • 100 gpork mince
  • 15 mlsoy sauce
  • 2garlic cloves, minced
  • 1spring onion, finely chopped

Method

  1. Cook the dry white rice in salted water until soft.
  2. Sear the pork mince in the vegetable oil in a heavy pan until crisp.
  3. Add the minced garlic and grated ginger, frying briefly until fragrant.
  4. Fold in the thick broad bean paste and soy sauce, building a dark sauce.
  5. Slide the cubed firm tofu into the bubbling reduced sauce and toss gently.
  6. Cook briefly until the tofu is warmed through. Drizzle the sesame oil over everything.
  7. Serve over the steamed white rice, garnished with the chopped spring onion.
