Moo Shu Pork with Pancakes
A savory stir-fry of minced pork, shredded cabbage, and scrambled egg, wrapped heartily inside warm, delicate Chinese pancakes.
Ingredients

- 100 gwhite cabbage, shredded
- 1 tbsphoisin sauce
- salt and pepper to taste
- 50 gmushrooms, thinly sliced
- 1 tbspvegetable oil
- 2eggs
- 150 gpork mince
- 15 mlsoy sauce
- 4chinese pancakes
- 2garlic cloves, minced
Method
- Heat half of the vegetable oil in a wok. Lightly beat the eggs, scramble them rapidly in the wok, and then remove.
- In the remaining oil, cook the minced pork until fully browned.
- Add the shredded white cabbage, sliced mushrooms, and minced garlic to the wok. Stir-fry constantly until the cabbage softens.
- Return the scrambled eggs to the wok.
- Stir in the hoisin sauce and soy sauce, tossing everything together until completely coated and heated through.
- Warm the Chinese pancakes briefly in a dry pan or steamer.
- Serve the savory pork mixture immediately, encouraging diners to fill and roll the warm pancakes themselves.
