  • 150 gcucumber, sliced
  • 1 tbspvegetable oil
  • 0.5 tbspsesame oil
  • 5 gsesame seeds
  • 10 mlrice vinegar
  • 15 mlsoy sauce

Method

  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Fry the frozen scallion pancakes one at a time until completely golden, flaky, and crispy on both sides.
  3. While the pancakes cook, place the sliced cucumber into a bowl.
  4. In a small dish, whisk together the soy sauce, rice vinegar, and sesame oil.
  5. Pour the dressing over the cucumber slices, tossing well, and sprinkle with the sesame seeds.
  6. Cut the hot, crispy scallion pancakes into wedges and serve immediately with the fresh cucumber salad.
