Scallion Pancakes with Cucumber Salad
Flaky, crispy, pan-fried flatbreads heavily studded with green onions, served alongside a sharp, tangy, and cooling smashed cucumber salad.
Ingredients
Quantities are for one portion.
- 2frozen scallion pancakes (store-bought)
- 150 gcucumber, sliced
- 1 tbspvegetable oil
- 0.5 tbspsesame oil
- 5 gsesame seeds
- 10 mlrice vinegar
- 15 mlsoy sauce
Method
- Heat the vegetable oil in a frying pan over medium heat.
- Fry the frozen scallion pancakes one at a time until completely golden, flaky, and crispy on both sides.
- While the pancakes cook, place the sliced cucumber into a bowl.
- In a small dish, whisk together the soy sauce, rice vinegar, and sesame oil.
- Pour the dressing over the cucumber slices, tossing well, and sprinkle with the sesame seeds.
- Cut the hot, crispy scallion pancakes into wedges and serve immediately with the fresh cucumber salad.
