Sweet and Sour Pork with Rice
Crispy chunks of fried pork shoulder enveloped in a glossy, tangy red sauce with crunchy peppers and onions, served with steamed rice.
Ingredients
Quantities are for one portion.
- 1green bell pepper, diced
- 20 gsugar
- salt and pepper to taste
- 1onion, diced
- 70 gwhite rice
- 2 tbspvegetable oil
- 30 mlrice vinegar
- 150 gpork shoulder, diced
- 2garlic cloves, minced
- 30 gplain flour
- 1 tbsptomato ketchup
Method
- Cook the dry white rice directly in salted water until soft, then set aside.
- Season the diced pork with salt and pepper, then toss completely in the plain flour.
- Heat most of the vegetable oil in a large pan and fry the coated pork until golden and entirely crisp. Set aside on a paper towel.
- In the remaining oil, stir-fry the diced onion, green bell pepper, and garlic until slightly softened.
- In a small bowl, mix the tomato ketchup, rice vinegar, and sugar to form the sauce.
- Add the fried pork back into the pan, pour the sauce over everything, and toss quickly until thick and glossy.
- Serve the hot crispy pork immediately with the steamed white rice.
