Ingredients
Quantities are for one portion.
- 200 mlchicken stock
- 1green bell pepper, diced
- 15 mlolive oil
- 60 gsmoked sausage, sliced
- salt and pepper to taste
- 1onion, diced
- 1 tspcajun seasoning
- 100 gcanned diced tomatoes
- 100 gchicken thighs, diced
- 2garlic cloves, minced
- 80 graw shrimp, peeled and deveined
- 70 glong-grain rice
Method
- Heat the olive oil in a wide pot. Sear the sausage and chicken until browned, then remove them and set aside.
- In the same pot, cook the onion and bell pepper until soft. Stir in the garlic and Cajun seasoning for a minute.
- Add the rice and diced tomatoes, then pour in the chicken stock. Season with salt and pepper and bring to a simmer.
- Return the chicken and sausage to the pot. Cover and cook gently until the rice is tender and the liquid is absorbed.
- Lay the shrimp on top of the rice, cover again, and let it steam until the shrimp are entirely pink.
- Stir everything gently together and serve hot.
