Hainanese Chicken Rice
Silky poached chicken presented beside uniquely fragrant rice cooked directly in the savory chicken poaching broth, accompanied by a savory dressing.
Ingredients
Quantities are for one portion.
- 200 mlchicken stock
- 15 gfresh ginger, grated
- 150 gchicken breast
- 70 gwhite rice
- 1cucumber, sliced
- 1 tbspvegetable oil
- 1 tbspsesame oil
- 15 mlsoy sauce
- 2garlic cloves, minced
Method
- Heat the vegetable oil in a small pot and softly cook half of the garlic and all of the ginger until fragrant.
- Add the dry white rice, toasting briefly, then pour in the full measure of chicken stock. Bring to a boil, cover, and simmer over low heat until completely tender.
- In a separate pot, gently poach the chicken breast in water until fully cooked through and wonderfully soft. Remove and slice carefully.
- Prepare a simple dressing by mixing the soy sauce, sesame oil, and the remaining minced garlic.
- Plate the fragrant cooked rice alongside the precise slices of poached chicken.
- Place the fresh cucumber slices neatly on the plate.
- Pour the savory dressing entirely over the chicken and serve warm.
