Chimichurri Steak with Roasted Potatoes
A perfect cut of steak topped with a vibrant, garlicky parsley sauce, accompanied by beautifully roasted potato wedges.
Ingredients
Quantities are for one portion.
- 1 tspdried oregano
- 200 gsirloin steak
- 0.5 tspchili flakes
- 45 mlolive oil
- salt and pepper to taste
- 200 gpotatoes, cut into wedges
- 15 mlred wine vinegar
- 2garlic cloves, minced
- 20 gfresh parsley, finely chopped
Method
- Preheat the oven. Toss the potato wedges with half of the olive oil, salt, and pepper, and roast until golden and crispy.
- Prepare the chimichurri by mixing the parsley, garlic, red wine vinegar, oregano, chili flakes, and the remaining olive oil in a bowl with a pinch of salt.
- Season the steak aggressively with salt and pepper on both sides.
- Heat a heavy pan until smoking hot. Sear the steak deeply on both sides until cooked to your preference, then let it rest on a board.
- Slice the steak against the grain.
- Serve the steak beside the roasted potatoes, spooning the fresh chimichurri sauce over the meat.
