Locro
A culturally iconic thick winter stew built slowly with hominy, beans, squash, and an assortment of rich meats.
Ingredients
Quantities are for one portion.
- 100 gcanned white beans, drained
- 150 gbutternut squash, peeled and diced
- 15 mlolive oil
- 300 mlbeef stock
- salt and pepper to taste
- 1onion, diced
- 50 gchorizo, sliced
- 1 tspground cumin
- 100 gbeef stewing cuts, diced
- 2garlic cloves, minced
- 100 gcanned hominy, drained
- 1 tspsweet paprika
Method
- Heat the olive oil in a heavy pot over medium heat. Fry the chorizo until its oils release, then add the beef and brown on all sides.
- Toss the onion into the pot and cook until translucent. Add the garlic, paprika, and cumin, cooking briefly until fragrant.
- Pour in the hominy, white beans, butternut squash, and the beef stock.
- Bring to a gentle boil, then cover and simmer over low heat.
- Allow the stew to cook slowly until the squash breaks down slightly, thickening the broth, and the beef is tender.
- Season carefully with salt and pepper before ladling into a large bowl to serve hot.
