Ingredients

Quantities are for one portion.

  • 100 gcanned white beans, drained
  • 150 gbutternut squash, peeled and diced
  • 15 mlolive oil
  • 300 mlbeef stock
  • salt and pepper to taste
  • 1onion, diced
  • 50 gchorizo, sliced
  • 1 tspground cumin
  • 100 gbeef stewing cuts, diced
  • 2garlic cloves, minced
  • 100 gcanned hominy, drained
  • 1 tspsweet paprika

Method

  1. Heat the olive oil in a heavy pot over medium heat. Fry the chorizo until its oils release, then add the beef and brown on all sides.
  2. Toss the onion into the pot and cook until translucent. Add the garlic, paprika, and cumin, cooking briefly until fragrant.
  3. Pour in the hominy, white beans, butternut squash, and the beef stock.
  4. Bring to a gentle boil, then cover and simmer over low heat.
  5. Allow the stew to cook slowly until the squash breaks down slightly, thickening the broth, and the beef is tender.
  6. Season carefully with salt and pepper before ladling into a large bowl to serve hot.
