Pastel de Papa
A deeply comforting oven-baked casserole featuring layers of spiced minced beef concealed beneath an incredibly fluffy, golden potato mash.
Ingredients
Quantities are for one portion.
- 15 mlolive oil
- 1red bell pepper, finely diced
- 20 mlwhole milk
- salt and pepper to taste
- 150 glean beef mince
- 1hard-boiled egg, chopped
- 1onion, finely diced
- 10 gbutter
- 250 gpotatoes, peeled and cubed
- 1 tspground cumin
- 1 tspsweet paprika
Method
- Preheat the oven. Boil the potatoes in salted water until completely soft, then drain.
- Mash the warm potatoes aggressively with the butter and milk until smooth and fluffy. Season with salt and pepper.
- Heat the olive oil in a pan and deeply sauté the onion and bell pepper until soft.
- Stir the beef mince into the pan, breaking it up, and cook until beautifully browned. Mix in the paprika, cumin, salt, and pepper.
- Take the beef off the heat and briefly fold in the chopped hard-boiled egg.
- Spread the meat mixture into an ovenproof dish. Carefully layer the mashed potatoes evenly over the top.
- Bake until the entire dish is bubbling and the top of the potatoes starts to catch a crispy golden color.
