Ingredients
Quantities are for one portion.
- 30 gmayonnaise
- 30 gsweet corn kernels
- 1 slicecheddar cheese
- 15 mlolive oil
- 100 gcanned black beans, drained
- 20 glettuce leaves
- salt to taste
- 150 gpotatoes, cut into thick fries
- 1 tspsmoked paprika
- 30 gtomato, sliced
- 10 gplain flour
- 1burger bun
Method
- Preheat the oven to 200°C (400°F). Toss the potato fries with half of the olive oil and salt, spread on a baking tray, and bake for twenty-five minutes until crispy.
- In a bowl, mash the drained black beans roughly, then stir in the sweet corn, plain flour, smoked paprika, and a pinch of salt until a firm mixture forms.
- Shape the black bean mixture into a thick patty using your hands.
- Heat the remaining olive oil in a frying pan over medium heat and cook the patty for four minutes on each side until a crisp crust develops.
- Place the slice of cheddar cheese on the hot patty during the last minute of cooking so it melts beautifully.
- Toast the burger bun lightly, spread with mayonnaise, and assemble the burger with the lettuce, tomato slices, and the cheesy black bean patty.
- Serve the hot burger immediately with the crispy oven fries on the side.
