BBQ Brisket with Baked Beans and Cornbread
Slow-cooked, tender beef brisket glazed in sweet barbecue sauce, accompanied by savory baked beans and golden cornbread.
Ingredients
Quantities are for one portion.
- salt and pepper to taste
- 10 gbutter, melted
- 1egg
- 80 mlbuttermilk
- 2 tbspbbq sauce
- 1 tspsmoked paprika
- 40 gfine cornmeal
- 30 gplain flour
- 200 gbeef brisket
- 100 gcanned baked beans
Method
- Preheat the oven. Season the brisket heavily with smoked paprika, salt, and pepper.
- Place the brisket in a covered dish with a splash of water and bake low and slow until incredibly tender.
- Meanwhile, whisk the cornmeal, flour, egg, buttermilk, and butter together with a pinch of salt to make a batter.
- Pour the batter into a greased ramekin and bake until golden and cooked through.
- In the final stage of cooking the beef, remove the cover, coat completely in the BBQ sauce, and return to the oven to become sticky.
- Warm the baked beans in a small pot.
- Slice the brisket and serve with the warm beans and fresh cornbread.
