Ingredients

  • 10 gbutter, melted
  • 1egg
  • 80 mlbuttermilk
  • 2 tbspbbq sauce
  • 1 tspsmoked paprika
  • 40 gfine cornmeal
  • 30 gplain flour
  • 200 gbeef brisket
  • 100 gcanned baked beans

Method

  1. Preheat the oven. Season the brisket heavily with smoked paprika, salt, and pepper.
  2. Place the brisket in a covered dish with a splash of water and bake low and slow until incredibly tender.
  3. Meanwhile, whisk the cornmeal, flour, egg, buttermilk, and butter together with a pinch of salt to make a batter.
  4. Pour the batter into a greased ramekin and bake until golden and cooked through.
  5. In the final stage of cooking the beef, remove the cover, coat completely in the BBQ sauce, and return to the oven to become sticky.
  6. Warm the baked beans in a small pot.
  7. Slice the brisket and serve with the warm beans and fresh cornbread.
