Ingredients

  • 1 tbspvegetable oil
  • 50 mlsalsa roja (store-bought)
  • 60 mlwarm water
  • 100 gmasa harina (corn flour)
  • 50 giceberg lettuce, shredded
  • 150 grefried beans (store-bought)
  • 50 gqueso fresco (or feta) cheese, crumbled

Method

  1. Mix the masa harina and warm water in a bowl until a soft dough forms. Divide into equal portions and shape into thick, flat discs with a small raised border.
  2. Heat the vegetable oil in a frying pan over medium heat and fry the masa discs until golden and crispy on both sides.
  3. While the sopes cook, gently warm the refried beans in a small pot.
  4. Spread a generous layer of the warm refried beans inside the border of each fried sope.
  5. Top the beans with the shredded lettuce, a spoonful of salsa roja, and the crumbled queso fresco before serving.
