Ingredients

Quantities are for one portion.

  • 10 ggreen olives, pitted and halved
  • 10 graisins
  • 15 mlolive oil
  • 70 gdry white rice
  • salt and pepper to taste
  • 150 gminced beef
  • 1 tspcumin
  • 50 gcanned diced tomatoes
  • 150 gpotatoes, peeled and cubed
  • 1carrot, peeled and cubed

Method

  1. Steam the white rice in a rice cooker until fluffy.
  2. Heat the olive oil in a pan or pot. Add the minced beef and brown it over medium-high heat.
  3. Stir the cumin, salt, and pepper into the hot beef.
  4. Add the cubed potato, cubed carrot, and canned diced tomatoes.
  5. Stir the raisins and halved green olives into the mixture. Add a splash of water to loosen the sauce.
  6. Turn the heat down, cover, and simmer slowly until the potatoes and carrots are tender and the flavors have mingled.
  7. Serve the savory and sweet beef picadillo stew over the hot steamed rice.
