Carne Asada Plate with Rice and Beans
A thin, citrus-marinated flank steak grilled over high heat, served with pinto beans, rice, and fresh pico de gallo.
Ingredients
Quantities are for one portion.
- 1 tbsplime juice
- 50 gcanned pinto beans, rinsed
- 15 mlolive oil
- 20 gpico de gallo fresh salsa
- 70 gdry white rice
- salt and pepper to taste
- 1 tspcumin
- 1 tspchili powder
- 150 gbeef flank steak
Method
- In a bowl, toss the flank steak with the lime juice, cumin, chili powder, olive oil, salt, and pepper. Let it marinate for ten minutes.
- Steam the white rice until fluffy.
- Warm the pinto beans in a small pot with a pinch of salt and a splash of water.
- Heat a heavy grill pan or barbecue until very hot.
- Place the marinated steak in the pan. Sear quickly to develop a dark crust on both sides, keeping the center tender.
- Transfer the steak to a cutting board. Let it rest, then slice it thinly against the grain.
- Arrange the sliced carne asada alongside the hot rice, warm beans, and fresh pico de gallo salsa.
