Ingredients

Quantities are for one portion.

  • 1 tbsplime juice
  • 50 gcanned pinto beans, rinsed
  • 15 mlolive oil
  • 20 gpico de gallo fresh salsa
  • 70 gdry white rice
  • salt and pepper to taste
  • 1 tspcumin
  • 1 tspchili powder
  • 150 gbeef flank steak

Method

  1. In a bowl, toss the flank steak with the lime juice, cumin, chili powder, olive oil, salt, and pepper. Let it marinate for ten minutes.
  2. Steam the white rice until fluffy.
  3. Warm the pinto beans in a small pot with a pinch of salt and a splash of water.
  4. Heat a heavy grill pan or barbecue until very hot.
  5. Place the marinated steak in the pan. Sear quickly to develop a dark crust on both sides, keeping the center tender.
  6. Transfer the steak to a cutting board. Let it rest, then slice it thinly against the grain.
  7. Arrange the sliced carne asada alongside the hot rice, warm beans, and fresh pico de gallo salsa.
