Thai Omelette with Minced Pork and Rice

Ingredients

Quantities are for one portion.

  • 1 tbspsriracha sauce
  • 3 tbspvegetable oil (for deep-frying style)
  • 10 gfresh cilantro
  • 3eggs
  • 100 gpork mince
  • 70 gdry jasmine rice
  • 1 tspfish sauce

Method

  1. Steam the jasmine rice in a small pot until soft. Keep warm.
  2. In a small pan, quick-fry the pork mince with a drop of water until fully cooked. Let it cool slightly.
  3. In a bowl, beat the eggs with the fish sauce until very frothy.
  4. Fold the cooked pork mince and half the fresh cilantro into the beaten eggs.
  5. Heat the vegetable oil in a wok over high heat until it just begins to smoke.
  6. Pour the egg mixture directly into the center of the oil. It will puff up dramatically. Fry until the bottom is dark golden, then flip to brown the other side.
  7. Drain the thick, crispy omelette briefly. Serve it over the warm jasmine rice, garnished with remaining cilantro and a side of sriracha.
