Tom Yum Fried Rice with Shrimp
A vibrant, zesty fusion dish tossing day-old jasmine rice with plump prawns and the iconic sour-spicy flavors of Tom Yum soup paste.
Ingredients
Quantities are for one portion.
- 30 gtom yum paste
- 10 gfresh cilantro (coriander)
- 1 tbspvegetable oil
- 1egg
- 1lime wedge
- 20 gcherry tomatoes, halved
- 70 gdry jasmine rice
- 150 graw prawns, peeled
Method
- Rinse and steam the jasmine rice until fluffy. Spread it on a tray to cool.
- Heat the vegetable oil in a wok. Fry the raw prawns until they just turn pink, then remove them immediately.
- Crack the egg into the hot wok. Scramble it until it forms loose chunks.
- Add the cold jasmine rice to the wok. Toss the grains with the scrambled egg over high heat.
- Stir the tom yum paste into the rice, coating every grain in the red, sour-spicy mixture.
- Return the cooked prawns to the wok along with the halved cherry tomatoes. Toss briefly to heat through.
- Serve the bright orange fried rice hot, garnished with fresh cilantro and a lime wedge.
