Vegetarian Pad Kee Mao
Known as drunken noodles, this dish features wide, chewy rice noodles stir-fried with spicy tofu, colorful bell peppers, and intensely aromatic basil.
Ingredients
Quantities are for one portion.
- 150 gfirm tofu, cubed
- 30 mlvegetarian oyster sauce (store-bought)
- 1red bell pepper, sliced
- 0.5onion, sliced
- 100 gwide rice noodles (dry)
- 1 tbspvegetable oil
- 15 gfresh Thai basil
- 15 mlsoy sauce
Method
- Soak the wide rice noodles in boiling water according to the packet instructions until tender, then drain well.
- Heat the vegetable oil in a wok or large frying pan over extremely high heat.
- Toss the cubed tofu into the wok and sear until golden and slightly crispy on the edges.
- Add the sliced onion and red bell pepper, stir-frying quickly until slightly charred.
- Add the drained noodles to the wok along with the vegetarian oyster sauce and soy sauce, tossing aggressively to coat everything.
- Turn off the heat, fold in the fresh Thai basil until wilted, and serve immediately.
