Ingredients

Quantities are for one portion.

  • 150 gfirm tofu, cubed
  • 30 mlvegetarian oyster sauce (store-bought)
  • 1red bell pepper, sliced
  • 0.5onion, sliced
  • 100 gwide rice noodles (dry)
  • 1 tbspvegetable oil
  • 15 gfresh Thai basil
  • 15 mlsoy sauce

Method

  1. Soak the wide rice noodles in boiling water according to the packet instructions until tender, then drain well.
  2. Heat the vegetable oil in a wok or large frying pan over extremely high heat.
  3. Toss the cubed tofu into the wok and sear until golden and slightly crispy on the edges.
  4. Add the sliced onion and red bell pepper, stir-frying quickly until slightly charred.
  5. Add the drained noodles to the wok along with the vegetarian oyster sauce and soy sauce, tossing aggressively to coat everything.
  6. Turn off the heat, fold in the fresh Thai basil until wilted, and serve immediately.
