Ingredients

Quantities are for one portion.

  • 1red bell pepper, sliced
  • 100 mlcoconut milk
  • 30 gred curry paste
  • 1 tbspvegetable oil
  • 70 gdry jasmine rice
  • 10 gfresh thai basil leaves
  • 150 gbeef sirloin, cut into thin strips
  • 1 tspfish sauce

Method

  1. Steam the jasmine rice in a small pot or rice cooker until fluffy. Keep warm.
  2. Heat the vegetable oil in a wok over medium-high heat. Fry the red curry paste to release its intense color and aromatics.
  3. Add a splash of the coconut milk to the paste and stir until it bubbles and thickens.
  4. Drop the thin beef strips into the red paste. Stir-fry rapidly to brown the meat.
  5. Pour in the rest of the coconut milk along with the sliced red bell pepper. Add the fish sauce to season.
  6. Simmer the curry just until the beef is tender and the peppers soften slightly to retain some crunch.
  7. Turn off the heat and stir in the fresh Thai basil. Serve hot in a bowl with a side of steamed rice.
