Red Curry Beef with Rice
A robust, colored Thai staple featuring tender slices of beef bathed in an aromatic, complex red chili coconut sauce.
Ingredients
Quantities are for one portion.
- 1red bell pepper, sliced
- 100 mlcoconut milk
- 30 gred curry paste
- 1 tbspvegetable oil
- 70 gdry jasmine rice
- 10 gfresh thai basil leaves
- 150 gbeef sirloin, cut into thin strips
- 1 tspfish sauce
Method
- Steam the jasmine rice in a small pot or rice cooker until fluffy. Keep warm.
- Heat the vegetable oil in a wok over medium-high heat. Fry the red curry paste to release its intense color and aromatics.
- Add a splash of the coconut milk to the paste and stir until it bubbles and thickens.
- Drop the thin beef strips into the red paste. Stir-fry rapidly to brown the meat.
- Pour in the rest of the coconut milk along with the sliced red bell pepper. Add the fish sauce to season.
- Simmer the curry just until the beef is tender and the peppers soften slightly to retain some crunch.
- Turn off the heat and stir in the fresh Thai basil. Serve hot in a bowl with a side of steamed rice.
