Thai Basil Beef Rice Bowl
A furious, rapid stir-fry of minced beef, searing chilies, and aromatic holy basil, draped over plain rice and topped with a fried egg.
Ingredients
Quantities are for one portion.
- 1 tbspgluten-free soy sauce (or tamari)
- 1 tbspvegetable oil
- 1egg
- 15 gfresh thai basil (or holy basil)
- 1bird's eye chili, sliced
- 70 gdry jasmine rice
- 1garlic clove, minced
- 150 gbeef mince
- 1 tspfish sauce
Method
- Steam the jasmine rice in a small pot until soft. Keep warm.
- Heat half the vegetable oil in a wok or heavy pan over high heat. Fry the minced garlic and sliced chili until fragrant.
- Add the beef mince to the wok. Break it apart and fry it until it browns and crisps.
- Season the beef with the gluten-free soy sauce and fish sauce. Reduce the moisture slightly.
- Turn off the heat. Immediately toss the fresh Thai basil leaves into the hot beef so they wilt from the residual heat.
- In a separate small pan, heat the remaining oil until very hot. Fry the egg so the edges bubble and crisp but the yolk stays runny.
- Mound the white rice in a bowl. Spoon the spicy beef and basil over the rice and lay the crispy fried egg on top.
