Ingredients

Quantities are for one portion.

  • 1 tbspgluten-free soy sauce (or tamari)
  • 1 tbspvegetable oil
  • 1egg
  • 15 gfresh thai basil (or holy basil)
  • 1bird's eye chili, sliced
  • 70 gdry jasmine rice
  • 1garlic clove, minced
  • 150 gbeef mince
  • 1 tspfish sauce

Method

  1. Steam the jasmine rice in a small pot until soft. Keep warm.
  2. Heat half the vegetable oil in a wok or heavy pan over high heat. Fry the minced garlic and sliced chili until fragrant.
  3. Add the beef mince to the wok. Break it apart and fry it until it browns and crisps.
  4. Season the beef with the gluten-free soy sauce and fish sauce. Reduce the moisture slightly.
  5. Turn off the heat. Immediately toss the fresh Thai basil leaves into the hot beef so they wilt from the residual heat.
  6. In a separate small pan, heat the remaining oil until very hot. Fry the egg so the edges bubble and crisp but the yolk stays runny.
  7. Mound the white rice in a bowl. Spoon the spicy beef and basil over the rice and lay the crispy fried egg on top.
