Ingredients

Quantities are for one portion.

  • 50 gcassava flour (farofa)
  • 15 mlolive oil
  • 150 mlbeef stock
  • salt and pepper to taste
  • 1onion, diced
  • 70 gwhite rice
  • 10 gbutter
  • 1egg
  • 150 gbeef stewing cuts, finely diced
  • 1tomato, chopped
  • 2garlic cloves, minced
  • 10 gfresh parsley, chopped

Method

  1. Cook the dry white rice in salted water until tender, then set aside.
  2. Melt the butter in a pan, scramble the egg, then mix in the cassava flour with a pinch of salt until toasted. Set the farofa aside.
  3. Heat the olive oil in a wide pot and sear the finely diced beef until well crusted.
  4. Add the onion and garlic into the beef, cooking until lightly softened. Stir in the chopped tomato.
  5. Pour in the beef stock, lower the heat, cover tightly, and braise the beef until tender.
  6. Finish the beef stew with fresh chopped parsley.
  7. Serve the beef next to the white rice and crisp golden farofa.
