Keftedes with Rice Pilaf
Crispy on the outside, juicy on the inside fried Greek meatballs flavored with fresh mint, served beside buttery rice pilaf.
Ingredients
Quantities are for one portion.
- 15 mlolive oil
- 30 gplain breadcrumbs
- salt and pepper to taste
- 1onion, finely grated
- 70 gwhite rice
- 10 gbutter
- 1egg
- 2garlic cloves, minced
- 150 gbeef mince
- 10 gfresh mint, finely chopped
Method
- Melt the butter in a small pot and toast the dry white rice for a minute. Add salted water, cover, and simmer until the rice is tender.
- In a large bowl, combine the beef mince, grated onion, minced garlic, chopped mint, egg, breadcrumbs, salt, and pepper.
- Mix thoroughly by hand until well incorporated, then shape the mixture into small, flat meatballs.
- Let the meatballs rest in the fridge for a few minutes to firm up.
- Heat the olive oil in a heavy frying pan over medium heat.
- Fry the meatballs in batches until browned and crispy on all sides, ensuring they are cooked through.
- Serve the hot crispy meatballs beside a mound of the fluffy rice pilaf.
