Ingredients

Quantities are for one portion.

  • 1 tspdried oregano
  • 1lemon, juiced
  • 150 glamb shoulder, diced
  • 15 mlolive oil
  • salt and pepper to taste
  • 1onion, sliced
  • 250 gpotatoes, cut into wedges
  • 2garlic cloves, minced

Method

  1. Preheat the oven. Lay a large piece of baking parchment onto an oven tray.
  2. In a bowl, toss the diced lamb, potato wedges, sliced onion, garlic, lemon juice, olive oil, and oregano. Season with salt and pepper.
  3. Transfer the entire mixture directly into the center of the baking parchment.
  4. Gather the edges of the parchment and tie them tightly with kitchen string to create a sealed parcel.
  5. Bake slowly in the oven for a few hours until the lamb falls apart easily and the potatoes are soft and soaked in the juices.
  6. Remove from the oven and carefully untie or rip open the top of the parcel.
  7. Serve the rich, aromatic stew directly from the paper.
