Soutzoukakia with Rice

Ingredients

Quantities are for one portion.

  • 1 tspdried oregano
  • 15 mlolive oil
  • 20 gplain breadcrumbs
  • salt and pepper to taste
  • 1onion, finely diced
  • 70 gwhite rice
  • 150 gcanned diced tomatoes
  • 1 tspground cumin
  • 1egg
  • 2garlic cloves, minced
  • 150 gbeef mince

Method

  1. Cook the dry white rice in salted water until soft and fluffy. Set aside to keep warm.
  2. In a bowl, mix the beef mince, breadcrumbs, egg, half the minced garlic, half the cumin, salt, and pepper. Form the mixture into oblong meatballs.
  3. Heat the olive oil in a pan and brown the meatballs on all sides. Remove and set aside.
  4. In the same pan, sauté the diced onion and remaining garlic until softened.
  5. Stir in the diced tomatoes, remaining cumin, and oregano. Bring the sauce to a gentle simmer.
  6. Return the meatballs to the pan. Cover and simmer until the meatballs are cooked through and the sauce thickens.
  7. Serve the saucy meatballs hot over the plain white rice.
