Soutzoukakia with Rice
Tender oblong beef meatballs simmered in a rich, cumin-scented tomato and wine sauce, served over simple white rice.
Ingredients
Quantities are for one portion.
- 1 tspdried oregano
- 15 mlolive oil
- 20 gplain breadcrumbs
- salt and pepper to taste
- 1onion, finely diced
- 70 gwhite rice
- 150 gcanned diced tomatoes
- 1 tspground cumin
- 1egg
- 2garlic cloves, minced
- 150 gbeef mince
Method
- Cook the dry white rice in salted water until soft and fluffy. Set aside to keep warm.
- In a bowl, mix the beef mince, breadcrumbs, egg, half the minced garlic, half the cumin, salt, and pepper. Form the mixture into oblong meatballs.
- Heat the olive oil in a pan and brown the meatballs on all sides. Remove and set aside.
- In the same pan, sauté the diced onion and remaining garlic until softened.
- Stir in the diced tomatoes, remaining cumin, and oregano. Bring the sauce to a gentle simmer.
- Return the meatballs to the pan. Cover and simmer until the meatballs are cooked through and the sauce thickens.
- Serve the saucy meatballs hot over the plain white rice.
