Ingredients

Quantities are for one portion.

  • 80 gfeta cheese
  • 1 tspdried oregano
  • 20 mlolive oil
  • 80 gphyllo pastry sheets
  • 0.5red onion, sliced
  • 100 gcucumber, diced
  • 1 tspblack pepper
  • 15 gbutter, melted
  • 1egg, beaten
  • Pinch of salt
  • 100 gtomato, chopped

Method

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, crumble the feta cheese and mix it with the beaten egg and a pinch of black pepper.
  3. Lay out a sheet of phyllo pastry, brush it with the melted butter, fold it in thirds, and place a spoonful of the cheese mixture at one end.
  4. Fold the pastry diagonally over the filling to form a triangle, and continue folding to seal the parcel. Brush the outside with butter.
  5. Bake on a lined tray for twenty minutes until golden and crisp.
  6. Meanwhile, toss the chopped cucumber, tomatoes, and red onion in a bowl with the olive oil, oregano, and salt.
  7. Serve the hot tiropita triangles with the fresh Greek salad.
