Tiropita with Greek Salad
Crispy, golden phyllo pastry triangles stuffed with a savory feta and egg filling, served with a simple cucumber and tomato salad.
Ingredients
Quantities are for one portion.
- 80 gfeta cheese
- 1 tspdried oregano
- 20 mlolive oil
- 80 gphyllo pastry sheets
- 0.5red onion, sliced
- 100 gcucumber, diced
- 1 tspblack pepper
- 15 gbutter, melted
- 1egg, beaten
- Pinch of salt
- 100 gtomato, chopped
Method
- Preheat the oven to 180°C (350°F).
- In a bowl, crumble the feta cheese and mix it with the beaten egg and a pinch of black pepper.
- Lay out a sheet of phyllo pastry, brush it with the melted butter, fold it in thirds, and place a spoonful of the cheese mixture at one end.
- Fold the pastry diagonally over the filling to form a triangle, and continue folding to seal the parcel. Brush the outside with butter.
- Bake on a lined tray for twenty minutes until golden and crisp.
- Meanwhile, toss the chopped cucumber, tomatoes, and red onion in a bowl with the olive oil, oregano, and salt.
- Serve the hot tiropita triangles with the fresh Greek salad.
