Hamburg Steak with Rice (Hambagu)

A very tender Japanese-style meat patty made with a blend of beef and pork, glazed in a sweet tonkatsu and ketchup sauce.

Ingredients

Quantities are for one portion.

  • 1 tbspketchup
  • 70 gdry white rice
  • salt and pepper to taste
  • 1onion, finely diced
  • 20 gpanko breadcrumbs
  • 2 tbsptonkatsu sauce
  • 150 gmixed beef and pork mince
  • 1 tbspvegetable oil
  • 1egg, beaten

Method

  1. Steam the white rice until fluffy.
  2. Heat half the vegetable oil in a pan and sauté the finely diced onion until soft. Let it cool slightly.
  3. In a bowl, combine the meat mince, sautéed onion, panko breadcrumbs, beaten egg, salt, and pepper. Knead the mixture until it becomes sticky.
  4. Shape the meat mixture into a thick oval patty. Press an indentation into the center to prevent it doming while cooking.
  5. Heat the remaining oil in a pan. Fry the patty until brown and crusty on one side.
  6. Flip the patty, lower the heat, cover, and cook until the center is cooked through and juices run clear.
  7. Remove the patty. In the same pan, mix the tonkatsu sauce and ketchup, simmer briefly to create a glaze, then pour it over the hot patty beside the rice.
