Miso Salmon with Rice
A flaky, tender salmon fillet marinated and broiled in a sweet and savory white miso glaze, served with steamed rice and spinach.
Ingredients
Quantities are for one portion.
- 1 tbspwhite miso paste
- 15 gsugar
- 1 tbspmirin
- 70 gdry white rice
- salt to taste
- 10 gsesame seeds
- 1 tbspsake
- 50 gfresh spinach
- 150 gsalmon fillet
Method
- Create a marinade by mixing the white miso paste, mirin, sake, and sugar in a small bowl until smooth.
- Coat the salmon fillet in the miso paste and leave to marinate for a few minutes.
- Rinse the white rice and steam it until fluffy.
- Blanch the spinach in boiling salted water. Drain, squeeze out all the moisture, and roughly chop.
- Wipe the excess miso marinade off the salmon to prevent burning. Place the fillet under a hot broiler or in an oven.
- Cook until the exterior is dark and caramelized and the fish flakes easily.
- Serve the caramelized miso salmon with the steamed rice and a side of blanched spinach sprinkled with sesame seeds.
