Ingredients

Quantities are for one portion.

  • 1 tbspwhite miso paste
  • 15 gsugar
  • 1 tbspmirin
  • 70 gdry white rice
  • salt to taste
  • 10 gsesame seeds
  • 1 tbspsake
  • 50 gfresh spinach
  • 150 gsalmon fillet

Method

  1. Create a marinade by mixing the white miso paste, mirin, sake, and sugar in a small bowl until smooth.
  2. Coat the salmon fillet in the miso paste and leave to marinate for a few minutes.
  3. Rinse the white rice and steam it until fluffy.
  4. Blanch the spinach in boiling salted water. Drain, squeeze out all the moisture, and roughly chop.
  5. Wipe the excess miso marinade off the salmon to prevent burning. Place the fillet under a hot broiler or in an oven.
  6. Cook until the exterior is dark and caramelized and the fish flakes easily.
  7. Serve the caramelized miso salmon with the steamed rice and a side of blanched spinach sprinkled with sesame seeds.
