Ingredients

Quantities are for one portion.

  • 100 gedamame beans, shelled
  • 15 mlsushi vinegar
  • 4inari ages (seasoned tofu pouches)
  • 50 gcucumber, diced
  • 80 gshort-grain white rice (dry)
  • 1 tbspsesame dressing (store-bought)

Method

  1. Rinse the white rice and cook it according to the packet instructions.
  2. While the rice is still hot, gently fold in the sushi vinegar, then let the rice cool slightly.
  3. Carefully open the seasoned tofu pouches and stuff them generously with the warm sushi rice.
  4. In a separate bowl, toss the shelled edamame beans and diced cucumber together.
  5. Drizzle the sesame dressing over the edamame and cucumber, mixing well to create a fresh salad.
  6. Serve the sweet inari sushi alongside the crisp, dressed edamame salad.
