Japanese Beef Curry
A comforting stew of tender beef chunks, potatoes, and carrots in a rich, mild, slightly sweet curry sauce over steamed rice.
Ingredients
Quantities are for one portion.
- 150 gdiced beef (stewing cut)
- 70 gdry white rice
- 1onion, chopped
- 1 tbspvegetable oil
- 150 gpotatoes, peeled and cubed
- 1carrot, peeled and cubed
- 30 gjapanese curry roux blocks
Method
- Rinse the white rice and prepare it in a rice cooker to serve later.
- Heat the vegetable oil in a heavy pot. Brown the diced beef on all sides.
- Add the chopped onion to the beef, cooking until translucent.
- Add the cubed potato and carrot. Pour in enough water to just cover the ingredients.
- Bring the pot to a boil, then turn the heat to low, cover, and simmer slowly until the beef is very tender.
- Turn off the heat and break the curry roux blocks into the stew, stirring until dissolved and thick.
- Turn the heat back on low for three minutes. Serve the thick beef curry beside the hot steamed rice.
