Japanese Beef Curry

Ingredients

Quantities are for one portion.

  • 150 gdiced beef (stewing cut)
  • 70 gdry white rice
  • 1onion, chopped
  • 1 tbspvegetable oil
  • 150 gpotatoes, peeled and cubed
  • 1carrot, peeled and cubed
  • 30 gjapanese curry roux blocks

Method

  1. Rinse the white rice and prepare it in a rice cooker to serve later.
  2. Heat the vegetable oil in a heavy pot. Brown the diced beef on all sides.
  3. Add the chopped onion to the beef, cooking until translucent.
  4. Add the cubed potato and carrot. Pour in enough water to just cover the ingredients.
  5. Bring the pot to a boil, then turn the heat to low, cover, and simmer slowly until the beef is very tender.
  6. Turn off the heat and break the curry roux blocks into the stew, stirring until dissolved and thick.
  7. Turn the heat back on low for three minutes. Serve the thick beef curry beside the hot steamed rice.
